The Commission supports the facilitation of the development of local and mobile slaughterhouses, provided that the principles to ensure food safety and rules on the protection of animals at the time of killing(1), are respected.

Regulation (EC) No 853/2004(2) allows Member States to adopt, without compromising achievement of the objectives of that regulation, national measures adapting the specific hygiene requirements laid down in that regulation. Those national measures aim at:

— Enabling the continued use of traditional methods at any stage of production, processing or distribution of food; or

— Accommodating the needs of food businesses situated in regions that are subject to special geographic constraints.

In other cases, Member States can adopt adaptations to the construction, layout and equipment of establishments.
